Friday Pie-Day: Cranberry Pecan Pie



Have you been searching for the perfect pie to make for the holiday season? A delicious one that is really easy to make, doesn’t make a mess, uses seasonal ingredients, but is a creative twist on some classics? Well, look no further!


Simple ingredients – check!


Little mess – check! You mix the pie crust right in the pie pan!


(Plus the dough is very easy to mix, and you don’t even have to roll it out – just press it up the sides of the pan.)


Seasonal ingredients – check! These are two of my favorites, and the marriage of the two is just heavenly!


Simple to assemble – check! You literally mix all the ingredients in one bowl…


…add in the cranberries and pecans…


…and pour it into your easy, already assembled pie crust.


The pie definitely passes the taste test too – the tartness of the cranberries offsets the sweetness of the pecan pie that can sometimes be so overpowering.


Nothing beats a classic pecan pie or the delicious cranberry pie that we have made… except maybe this pie, which is the best of both worlds! It is quintessential to either Thanksgiving or Christmas too!


And can I just say again how awesome the crust is? Not only was it super easy to assemble, but it tasted wonderful, and the crispyness was just right.


As an added bonus, it is cat-approved via this ugly Christmas sweater dress of mine!


The only thing I would advise is making sure it has enough time to sit and cool and harden after coming out of the oven so it is not as juicy as ours. (This was after 2 hours of cooling.) No one seemed to complain though – it still tasted great!

Cranberry Pecan Pie (recipe from I Should Be Mopping the Floor)

CRUST:
½ cup canola oil
¼ cup milk
½ tsp. salt
1½ cups flour

FILLING:
1 cup light corn syrup
3 eggs
1 cup sugar
2 T. melted butter
1 tsp. vanilla
2 cups pecans
1½ cups fresh cranberries, rinsed


  1. Prepare pie crust by mixing all ingredients in the pie pan – stir with spoon until you  can form it into a ball with hands, then press into the sides.
  2. Prepare pie filling in large bowl – mix together first 5 ingredients.
  3. Add in pecans and cranberries. Pour into pie crust.
  4. Bake at 350 degrees for 60-65 minutes and let cool for at least 2 hours before serving.
